Smoothies / Soups
These recipes work best if you have a blender handy. I use a Vitamix at home - a splendid machine that can handle anything - but most smaller blenders can handle these recipes as well.
General Instructions:
- add ingredients in order shown
- start at low and quickly advance to highest speed (for Vitamix, start in low, go to 10, then to high)
- Most of these serve 2 - 3 helpings
Spicy Soup
If this doesn't all fit in your blender, leave out the spinach, mix the rest, then add the spinach when there's room. Or do in 2 batches.
- 2 cups water
- 3 stalks celery
- springs of oregano and thyme
- 1 red bell pepper (remove seeds)
- 1 avocado (peeled, pit removed)
- 1 cucumber (chunked into 2-4 pieces)
- 1 jalapeno
- 1 lime (peeled, halved, seeded)
- 3 cups spinach or kale
Ginger Greens
Substitute any fruit you have on hand. Some frozen fruit makes it thicker! (or add ice cubes if your blender can handle it).
- 2 cups water
- 1/2 cataloupe
- 1" ginger root (no need to remove skin)
- 1+ cup frozen peaches
- 1 apple (remove core)
- 2 cups spinach or kale
Beet Greens and Fruits
If you buy your beets from the right source, you get the greens still on them - it's like getting free greens!
- 1 cup water
- 2 bananas
- 1 cup beet greens
- 1 cup berries (fresh or frozen)
Gingery Beets
After using your free greens (above) use the beet here!
- 1 cup water
- 3 carrots
- 1 cucumber (chunks)
- 1 apple (quartered and cored)
- 1 beet (cut in half)
- 2 celery stalks
- 1/2 lemon (peeled, seeded)
- 1 inch ginger root
