Cruise-friendly Meals

Entrees

For an entree with multiple ingredients, it really makes sense to prepare everything ahead of starting up the stove. Measure out all the ingredients, do all the chopping etc. Use cups or small bowls to keep the different stages separated. Then all you do is dump each stage into the pot as you go along - your attention stays on the stove for safety.

Bean Curry

Saute

  • 1 onion, chopped
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1 clove garlic
  • 1 Tbs oil

Base

  • sm can tomatoes
  • 1 Tbs tomato paste
  • grated ginger root
  • 1 Tbs jalapeno, chopped
  • 2 cans black eyed peas or other beans
Spice Mixture
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp tumeric
  • 1 tsp garam masala
  • 1/8 - 1/4 tsp cayenne
  • 1 tsp cloves, cinnamon, pepper in any proportion
  1. Saute: Heat oil. Add seeds to hot oil for 10-30 seconds. When they start popping, add onion and garlic. Saute until soft.
  2. When onions are soft, add Base ingredients. Mix thouroughly.
  3. Then add Spice Mixture and some water if necessary. Bring to simmer and heat thoroughly.

Cruising McNuggets

Put all ingredients into large zip lock bag an hour or more before cooking:

  • 2 cans chicken meat (or 4 breasts, boneless, skinless, chopped)
  • 2 Tbs oil
  • 2 cloves garlic
  • 3/4 tsp salt
  • fresh ground pepper
  • 1 tsp each: cumin, thyme, paprika
  • 1/8 tsp cayenne
  • 1/4 tsp turmeric

 

After marinating, heat oil in a frying pan, then add chicken and cook for 5-10 minutes until thoroughly heated.
